The Canuck Cluck Grilled Chicken Burger

This chicken burger was inspired by the flavours and ingredients in Greek salad. The more adventurous types can add black olives and green pepper. The red and white in the tomatoes, red onion, and feta cheese make this a colourful, patriotic Canada Day meal.

Ingredients

2 boneless, skinless chicken breast(s)
2 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
2 cloves garlic, minced
1 tsp oregano, dried
¼ tsp salt
¼ tsp pepper
2 tsp lemon juice
1 green onion(s), minced
½ cup feta cheese, crumbled
⅓ cup plum tomatoes, diced
⅓ cup red onion(s), thinly sliced
1 English cucumber, thinly sliced
4 whole wheat hamburger buns

Steps

  1. In a large bowl, whisk together oil, vinegar, lemon juice, garlic, green onion, oregano, salt and pepper.

  2. Add chicken breasts; turn to coat.

  3. Let stand for 10 minutes or cover and refrigerate for up to 12 hours.

  4. Place chicken on greased grill over medium heat.

  5. Close lid and grill, turning once, until a thermometer inserted into the chicken reads 165°F (74°C).

  6. Cut buns in half. Sandwich chicken, feta cheese, tomato, red onion and cucumber in buns.
