Spicy Rubbed Chicken

Save money by making your own spice rub at home. It's inexpensive and doesn't contain all of the additives that you would find in a store bought package.

Ingredients

2 tbsp paprika
½ tsp cayenne (optional)
1 tbsp Five Spice Powder
1 tsp garlic powder
2 tbsp brown sugar
2 tsp curry powder
4 chicken legs, cut in pieces

Before you start, wash all surfaces and your hands with soap and warm water, and remember to wash your hands, utensils and cutting boards after they touch raw meat or eggs. Avoid cross-contamination by using a different cutting board for your meat and other ingredients. Make sure you’re cooking to safe temperatures and chilling any leftovers within two hours. Steps

  1. In a large zipperlock freezer bag add paprika, cayenne, five spice powder, garlic powder, brown sugar and curry powder. Mix well.

  2. Add chicken legs and toss. This mixture freezes well at this stage for up to 3 months.

  3. When ready to cook, thaw in fridge and empty into a large casserole dish.

  4. Bake, uncovered for 45-50 minutes or until internal temperature reaches 165°F

The spice mixture can be doubled and stored for future use, saving even more time and effort!
