Ole Smokes Chicken Dinner
Before you start, wash all surfaces and your hands with soap and warm water, and remember to wash your hands, utensils and cutting boards after they touch raw meat or eggs. Avoid cross-contamination by using a different cutting board for your meat and other ingredients. Make sure you’re cooking to safe temperatures and chilling any leftovers within two hours. Rinse and trim asparagus and lay into the bottom of a large, rectangular casserole dish. Drizzle with olive oil. Lay chicken breasts on top.
Mix together yogurt and salsa and spread evenly over chicken.
Bake, uncovered in 350°F (175°C) oven for 40-50 minutes until internal temperature reads 165°F (74°C).
Serve with corn chips and additional salsa.
