Honey-Grapefruit Chicken

    Add some zip to your family meal by making this citrus pleaser. Choose a pink or red grapefruit, which are on the sweeter side, for this recipe.

    Ingredients

    1 pink grapefruit
    2 tsp butter
    2 tsp olive oil
    6-8 boneless chicken thighs
    1 tbsp honey
    2 bay leaves
    6 cloves garlic, whole cloves roasted garlic
    ⅓ cup low-sodium chicken broth, homemade or purchased
    salt, to taste
    pepper, freshly ground, to taste
    cilantro, fresh, chopped, for garnish

    Steps

    1. On a work surface, remove the rind and pith from the grapefruit and use a knife to cut out the segments. Squeeze the juice from the fruit for the sauce after the segments have been removed and set aside.

    2. Heat the butter and oil in a frying pan over medium-high heat. Brown the chicken thighs on both sides.

    3. Add the honey, bay leaves, garlic and chicken broth.

    4. Cover and cook on low heat about 30 minutes, occasionally turning the chicken thighs.

    5. Five minutes before the chicken is done, add the grapefruit segments and reserved juice. Salt and pepper to taste.

    6. Garnish with fresh cilantro.

    7. Serve with orzo (rice-shaped pasta) and squash ribbons with garlic.

    Helpful Tip

    To roast garlic, bake the entire bulb in the oven for about 20 minutes at 425°F (220°C), until each clove is very creamy. For the recipe, the cloves must be added whole (with the skin).
