Garlic Mashed Potatoes

This flavourful potato dish is lighter in taste and lower in fat than many recipes!

Ingredients

2 ½ lbs potatoes, peeled and cut into chunks
3 garlic cloves, peeled
⅓ cup chicken broth, undiluted and preferably low-sodium
⅓ cup light sour cream
1 tbsp fresh sage leaves, finely chopped
or
½ tsp dried sage
salt to taste

Steps

  1. Place potatoes in a large saucepan with garlic.

  2. Cover with cold water then add about ½ tsp (2mL) salt. Cover and bring to the boil.

  3. Reduce heat and simmer gently until very tender, about 20 minutes.

  4. Drain well.

  5. Return potatoes and garlic to saucepan and over low heat, mash with chicken broth, sour cream and sage until as smooth as you like.

  6. Taste and add salt if needed.
