Crispy Orange Oven-Fried Chicken
Before you start, wash all surfaces and your hands with soap and warm water, and remember to wash your hands, utensils and cutting boards after they touch raw meat or eggs. Avoid cross-contamination by using a different cutting board for your meat and other ingredients. Make sure you’re cooking to safe temperatures and chilling any leftovers within two hours. Combine orange marmalade and minced gingerroot and brush onto chicken pieces.
Mix together soy sauce, sour cream, hot pepper sauce, cracker crumbs and sliced almonds and press mixture onto coated chicken pieces.
Place on lightly greased baking sheet. Bake in 350°F (175°C) oven for 25 to 30 minutes until a thermometer inserted into the chicken pieces reads 165ºF (74ºC).
