Chicken Stroganoff

Before you start, wash all surfaces and your hands with soap and warm water, and remember to wash your hands, utensils and cutting boards after they touch raw meat or eggs. Avoid cross-contamination by using a different cutting board for your meat and other ingredients. Make sure you’re cooking to safe temperatures and chilling any leftovers within two hours. Steps
Cut each chicken breast into two fillets. Place each fillet between sheets of plastic wrap and flatten with a meat mallet to approximately ½ inch thick. Cut chicken into 1 inch strips.
Heat 2 Tbsp of oil in a large skillet over medium-high heat and sauté sliced onion until soft but not colored. Add garlic and mushrooms and cook until golden brown. Remove onion, garlic and mushrooms from pan but keep warm.
Increase heat and add the remaining oil and fry chicken until golden brown and completely cooked (when internal temperature reaches 165°F (74°C). Add onions, garlic, mushrooms and season with salt and pepper.
Stir in sour cream and bring to gently boil. Sprinkle with fresh parsley.
Serve with rice or pasta.
