This 5-ingredient recipe is perfect for busy moms and is well paired with a caesar salad or seasonal vegetable.

  1. Heat oven to 400°F (200°C).
  2. Line baking sheet with foil and spray with cooking spray. Put chicken pieces one at a time in between plastic wrap or waxed paper and gently pound with flat side of meat mallet or rolling pin until 1/2-inch (1.25 cm) thick.
  3. Mix pesto and mayonnaise together and put in a dish. Mix together bread crumbs and cheese and put on a plate. Dip chicken into pesto mixture then dip in bread crumb mixture. Place on baking sheet.
  4. Bake 15 to 20 minutes, turning once, until juices run clear or internal temperature is 165°F (74°C) and coating is golden brown.
