Lemon Dijon Yogurt Chicken

This simple recipe makes a rich-tasting, delicious chicken that’s lovely served with green beans and roasted baby potatoes.

4 boneless, skinless chicken breasts
1 cup plain yogurt
1 tsp lemon zest
1 tbsp lemon juice
1 tbsp Dijon mustard
1 tsp basil, dried
½ tsp thyme, dried
1 clove garlic, minced
½ tsp black pepper

  1. Whisk together yogurt, lemon zest, lemon juice, mustard, spices and garlic in a large shallow dish. Add chicken breasts, turning to coat well.

  2. Preheat grill.

  3. Place chicken of top of grill over medium-high heat. Close lid and grill 10-15 minutes per side or until a thermometer inserted into the breast reads 165°F (74°C).

Helpful Tip

Oven method: Bake uncovered in 350°F (175°C) oven for 40-50 minutes or until a thermometer inserted into the breast reads 180°F (83°C).
