Preston Street Chicken Sandwich
Herbed Honey Dijon Sauce
Before you start, wash all surfaces and your hands with soap and warm water, and remember to wash your hands, utensils and cutting boards after they touch raw meat or eggs. Avoid cross-contamination by using a different cutting board for your meat and other ingredients. Make sure you’re cooking to safe temperatures and chilling any leftovers within two hours. Stir together honey Dijon mustard, mixed fresh herbs, and lemon juice. Use as a spread on sandwiches.
Blend canola oil, Italian dressing, and Italian seasoning. Add chicken to the mixture.
Marinate chicken breasts for 3 hours.
Grill chicken breast on medium heat until chicken is cooked through and meat thermometer registers 165°F (74°C) (about 5 minutes per side).
Place chicken breast, topped with Herbed Honey Dijon Sauce, Swiss cheese and lettuce on the Kaiser. Season with salt and pepper.
For added zing, add more lemon juice to the sauce.
