Preston Street Chicken Sandwich

This easy chicken sandwich uses an herb-infused honey-Dijon sauce to take it to the next level.

Ingredients

  • Serves: 4
  • Cook Time:
  • 4 boneless, skinless chicken breasts
  • leaf lettuce
  • Swiss cheese
  • 4 Kaiser rolls, split
  • salt, to taste
  • pepper, to taste
  • 1/2 cup (125 mL) canola oil
  • 1/2 cup (125 mL) Italian dressing
  • 2 tbsp (30 mL) Italian seasoning

Herbed Honey Dijon Sauce:

  • 1/4 cup (60 mL) honey Dijon mustard
  • 1 tsp (5 mL) mixed fresh herbs
  • 1/4 cup (60 mL) lemon juice

Instructions

Sandwich

  1. Blend canola oil, Italian dressing, and Italian seasoning. Add chicken to the mixture.

  2. Marinate chicken breasts for 3 hours.

  3. Grill chicken breast on medium heat until chicken is cooked through and meat thermometer registers 165°F (74°C) (about 5 minutes per side).

  4. Place chicken breast, topped with Herbed Honey Dijon Sauce, Swiss cheese and lettuce on the Kaiser.

  5. Season with salt and pepper

Herbed Honey Dijon Sauce

  1. Stir together honey Dijon mustard, mixed fresh herbs, and lemon juice. Use as a spread on sandwiches.

For added zing, add more lemon juice to the sauce.
