Bring a little sunshine into your kitchen with this traditional spicy Jamaican dish.

Ingredients

6 lbs chicken pieces
6 tbsp green onion, finely chopped
1 large onion, finely chopped
12 allspice (pimento) seeds, crushed and finely chopped
1 small Scotch Bonnet (or Jalapeño) pepper, seeded and finely-chopped
2 tsp brown sugar
½ tsp fresh ginger, finely chopped
3 tbsp fresh thyme
½ tsp black pepper
1 tbsp lemon juice

Before you start, wash all surfaces and your hands with soap and warm water, and remember to wash your hands, utensils and cutting boards after they touch raw meat or eggs. Avoid cross-contamination by using a different cutting board for your meat and other ingredients. Make sure you’re cooking to safe temperatures and chilling any leftovers within two hours. Steps

  1. Pat chicken dry with paper towels.

  2. Mix all spices, green onion, onion, brown sugar, ginger and lemon juice together.

  3. Coat chicken pieces with spice mix.

  4. Cover and marinate for at least an hour in refrigerator.

  5. Preheat oven to 350°F (175°C).

  6. Place chicken in shallow baking pan.

  7. Bake for approximately 45 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
