Hot Pickled Peppers And Feta Burgers
Before you start, wash all surfaces and your hands with soap and warm water, and remember to wash your hands, utensils and cutting boards after they touch raw meat or eggs. Place chicken in a wide bowl. Spread out so it covers the widest area possible. Sprinkle with the salt, feta, hot peppers and green onion.
Stir with a fork or use your finger to evenly distribute ingredients. Do not overwork because that toughens the burger. Divide in four, then form each into a burger about ½ inch (1 cm) thick. Press down in the centre with your thumb to form an indent.
Melt butter in a wide frying pan or coat with oil and place over medium heat. When hot, add burgers. Cover and cook over medium heat until browned, about 2 minutes a side. Then decrease heat to medium-low. Cover and continue cooking about 4 to 5 more minutes a side. Serve in warm buns topped with dollops of sour cream, sliced ripe tomatoes and thinly sliced cucumber.
