Ground Chicken & Salsa Sloppy Joes
Before you start, wash all surfaces and your hands with soap and warm water, and remember to wash your hands, utensils and cutting boards after they touch raw meat or eggs. Avoid cross-contamination by using a different cutting board for your meat and other ingredients. Make sure you’re cooking to safe temperatures and chilling any leftovers within two hours. Heat oil over medium heat in a non-stick skillet. Sauté ground chicken with onion and red pepper. Cook until chicken is cooked through and no pink remains.
Add chili powder and sauté another minute.
Stir in salsa and bring to a boil. Reduce heat and simmer for another 5 minutes.
Meanwhile, slice English muffins in half; toast under broiler. Spoon ½ cup (125 mL) chicken mixture over bottom halves; cover with tops and serve.
Makes 1 litre of sauce which is enough for eight ½ cup (125 mL) servings.
