Grilled Chicken
Watermelon Tomato Salad

Step by step

1
Preheat grill over medium-high heat.
2
Whisk together barbecue sauce and lemon juice in a small bowl. Pour over chicken breasts and coat on both sides with a brush.
3
Turn off burners on one half of the gas grill. Set chicken on cool side of grill and close lid. Grill chicken for 10 minutes, turn and cook another 10 minutes or until the temperature of the thickest part registers 165°F (74°C).
4
While the chicken is cooking prepare the salad by combing all the ingredients in a large bowl.
5
Serve salad with the grilled chicken pieces.
Recipe noteWatermelon and tomato are an unlikely, and surprisingly good, summer combination. The sweetness of the watermelon pairs nicely with the acidity of the tomatoes. Optional: add 1 tsp (5 mL) sugar to salad.
