Grilled Chicken Breasts with Fine Herb Mayonnaise

The fine herb mayonnaise in this recipe elevates these chicken sandwiches to the next level. Tarragon, dill, and cilantro each work to bring together the other flavours at play.

Ingredients

Sandwich

10 boneless, skinless chicken breasts
1 ½ tbsp ginger, fresh, minced
1 tbsp thyme, fresh, chopped
⅓ cup vinegar
⅓ cup lemon juice
1 tsp salt
1 tsp pepper
10 hamburger buns
herb mayonnaise, recipe follows
lettuce, leaves (for garnish)
tomato slices (for garnish)

Herb Mayonnaise

1 ¼ cups mayonnaise
2 tbsp tarragon, fresh, minced
2 tbsp dill, fresh, minced
2 tbsp cilantro, fresh, minced
1 tbsp garlic, minced
2 tbsp lemon zest
2 tbsp pepper, freshly ground
3 tbsp lemon juice

Steps

  1. In a bowl, combine ginger, thyme, vinegar, lemon juice, salt and pepper.

  2. Add the chicken and marinate in the refrigerator for 5 to 7 hours.

  3. In a bowl, combine all the ingredients and mix well. Refrigerate until needed.

  4. Cook the chicken on the grill at medium heat for about 10 minutes each side or until a meat thermometer inserted in each piece reads 165°F (74°C).

  5. Serve the chicken on hamburger buns, topped with lettuce, tomato and herb mayonnaise.
