Glazed Apricot Chicken

Apricot jam creates a sticky-sweet glaze for this chicken that’s perfect served on a bed of rice.

Ingredients

2 lb chicken breasts
or
2 lb chicken thighs
2 tbsp apricot jam
1 tbsp Dijon mustard
1 tbsp tarragon, fresh, minced
or
1 tsp tarragon, dried

Steps

  1. Preheat the oven to 350°F (175°C).

  2. Combine jam, mustard and tarragon in a small saucepan. Heat just enough to melt jam and blend ingredients.

  3. Place chicken pieces in a single layer in a baking dish, just large enough to hold all the chicken. With a pastry brush or a spoon, coat each piece of chicken with jam mixture. Cover baking dish with foil and bake for approximately 30 minutes or until juices run clear.

  4. Spoon extra sauce from baking dish on chicken when serving.

  5. Serve with vegetables of your choice.
