Coronation Creation Chicken Sandwich
Before you start, wash all surfaces and your hands with soap and warm water, and remember to wash your hands, utensils and cutting boards after they touch raw meat or eggs. Avoid cross-contamination by using a different cutting board for your meat and other ingredients. Make sure you’re cooking to safe temperatures and chilling any leftovers within two hours. Add all the marinade ingredients in a bowl and mix well.
Place all the chicken beasts in marinade cover and let sit in refrigerator for 8 hours.
Remove as much of the marinade from chicken as possible. (This will help reduce the flare-up smoke)
Mix the mayonnaise and horseradish in a small bowl.
Grill the chicken breasts on each side for 3 to 4 minutes or until the internal temperature reaches 165˚F (74˚C).
Spread a dollop of sauce on each side of the bun.
Place chicken breast lettuce and pickles on bun.
