Chicken with Herbed Cream Cheese and Prosciutto

Ingredients

  • 4 boneless chicken breasts
  • 8 slices of prosciutto
  • 1 package of Boursin Garlic & Herbs Cream Cheese
  • 1 tbsp (15 mL) olive oil

Instructions

  1. Preheat oven to 350°F. Cut an opening in the thickest side of each chicken breast with a sharp knife to create a pocket.  Using a spoon, insert Boursin cheese inside the pocket. 

  2. Wrap 2 slices of prosciutto around the breast to close the pocket. Repeat for the remaining chicken breasts. 

  3. Heat a non-stick pan to medium heat and add olive oil. Pan-fry the breasts on each side for about 2-3 minutes. Transfer breasts to a rectangular glass pan.

  4. Bake for 30-45 minutes until internal temperature of thickest part of breast meat reads 165°F on a meat thermometer. 

  5. Serve with rice and vegetables of your choice.
