Inspired by a spicy Tennessee classic, this fried chicken recipe is adapted to use less oil, but stays true to its crispy, juicy texture.

Ingredients

2 lbs chicken breasts, cut into strips
1 tsp salt, divided
½ tsp pepper, divided
2 eggs
½ cup buttermilk
¼ cup Franks RedHot Sauce, divided
½ cup all-purpose flour
3 tbsp vegetable oil
2 tbsp brown sugar
½ tsp garlic powder
½ tsp paprika
1 cup dill pickle slices

Steps

  1. Preheat air fryer to 400°F (200°C). Season chicken strips with ½ tsp (2 mL) salt and ¼ tsp (1 mL) pepper. In bowl, whisk together eggs, buttermilk and 2 tbsp (30 mL) hot sauce. In separate bowl, stir together flour, and remaining salt and pepper.

  2. Dip chicken strips in egg mixture, allowing excess to drip back into mixture; dip chicken strips into flour mixture.

  3. In batches, arrange chicken in well-greased air fryer tray; cook for 12 to 15 minutes, flipping halfway, until chicken is cooked through, golden brown and crispy.

  4. In large bowl, whisk together oil, brown sugar, chili powder, garlic powder, paprika and remaining hot sauce; add chicken strips, tossing to coat evenly.

  5. Serve with dill pickle slices.

  6. Alternatively, preheat oven to 400°F (200°C). Bake chicken in single layer, about ½-inch (1 cm) apart, on greased baking sheet for 18 minutes, turning chicken halfway, until golden brown and internal temperature of chicken registers 165°F (74°C) on instant-read thermometer.
