Take 5 ingredients most of us always have at home - and in 5 minutes you can have a healthy dinner in the oven. Match with a spinach salad or green peas from the freezer plus rice - and dinner’s done in about a half hour. More good news - it’s shy on fat and calories and if you are cooking for one - the downsizing math’s a snap.

6 to 8 chicken drumsticks or thighs
3 tbsp regular Dijon or grainy mustard
3 tbsp honey
2 tbsp melted butter or vegetable oil
1 ½ tsp curry powder
1 ½ tsp paprika (optional)

Before you start, wash all surfaces and your hands with soap and warm water, and remember to wash your hands, utensils and cutting boards after they touch raw meat or eggs. Avoid cross-contamination by using a different cutting board for your meat and other ingredients. Make sure you’re cooking to safe temperatures and chilling any leftovers within two hours.   1. Preheat oven to 375°F (190°C). Pull skin from chicken only if you wish. Place on an oiled or foil-lined baking sheet.

  2. Stir remaining ingredients together. Brush all over each piece of chicken.

  3. Bake in 375°F (190°C) oven for 15 minutes. Baste again and continue roasting until chicken feels springy when pressed, from 15 to 25 more minutes.

Helpful Tip

Wonderful with spinach, boy choy or peas and baked potatoes.
