Buffalo Chicken Nachos

This easy-to-make sharing appetizer is sure to be a crowd pleaser! These ooey-gooey nachos are the ultimate indulgence.

Ingredients

1 tbsp olive oil
1 lb chicken breasts, chopped
2 tsp garlic powder
2 tsp chili powder
½ tsp salt
¼ tsp pepper
3 tbsp melted butter
3 tbsp Louisiana-style hot sauce
1 bag (275 g) restaurant-style tortilla chips
3 cups shredded Cheddar cheese
½ cup crumbled blue cheese
½ cup thinly sliced red onion
½ cup pickled jalapeño peppers
2 green onions, thinly sliced

Steps

  1. Preheat oven to 425°F (220°C). Line baking sheet with parchment paper or foil; set aside.

  2. Heat oil in large skillet set over medium-high heat; cook chicken, garlic powder, chili powder, stirring, for 10 to 12 minutes or until chicken is cooked through and golden brown. Season with salt and pepper. Toss with melted butter and hot sauce.

  3. Arrange half of the chips in single layer on prepared baking sheet. Top with half each of the chicken mixture, Cheddar, blue cheese, red onion and pickled jalapeños. Repeat layers.

  4. Bake for 8 to 10 minutes or until cheese is melted. Sprinkle with sliced green onions before serving.

Helpful Tip

For an extra kick, use a spicier cheese, such as a Tex-Mex blend or Pepper Jack cheese.
