How to Make Chicken Cutlets
You can buy chicken cutlets at the grocery store but why bother when you can easily make them at home! It’s cheaper and takes only minutes, and can be made using ingredients we already have in our pantry.
To flatten the chicken, place a chicken breast between two pieces of cling wrap and using a mallet pound the chicken until it’s about a ¼” thick. Dredge your chicken pieces in flour (shaking off the excess), then in beaten egg and finally in some bread crumbs. Fry in an oiled pan over medium-high heat about 2-3 minutes a side. The whole thing takes only 20 minutes!
You can add other seasonings to the coating e.g. salt and pepper to the flour or garlic to the eggs. For a traditional schnitzel, add some grainy mustard to the eggs and when ready to plate sprinkle with chopped parsley and serve with lemon wedges.
Can also be served in a crusty bun for an easy lunch.
