The best breakfast that you can eat is one that is a balance of protein, carbohydrates and healthy fats.  Adding chicken to your breakfast as the protein source will allow you to get all the essential amino acids your body needs for growth and development.  Plus, it will keep you feeling satisfied until your lunch/mid-morning snack. 

This is a go-to “Grab and Go” breakfast recipe that offers important nutrients you need to start your day off right.   Plus the use of leftover chicken definitely will help cut down on the morning breakfast rush. 

Let’s Talk Lunch!

There are cultural differences in what is typically the “main meal” of the day.  Generally, in North America, lunch is meant to sustain you through the workday, but it doesn’t need to be a feast.   Yet it is possible to overdo it at lunch.  So, try to plan your lunches to be satisfying, wholesome, nutritious and include chicken! 

This quick and easy Chicken Bombay Salad Sandwich recipe can be made with leftover roast chicken.  Or if you like to save time you can make a big batch and have it ready-to-go for your weekday lunches.    

Breakfast Turned Lunch!

You can easily turn a breakfast into a lunch.  Here are a few great examples!

Chicken & Cheese Breakfast Muffins:  You can make these breakfast muffins and eat them as is…or try crumbling the muffins over a mixture of leafy greens as a salad.  They’ll be delicious savory protein bites for lunchtime!

Chicken Carmelized Onion English Muffins:  This recipe can be converted to a lunch easily – and you can even play around with the ingredients.  Try the recipe on a bagel instead of the English muffin and turn it into a pizza bagel!

Ground Chicken, Spinach & Egg Skillet:  Okay – baked eggs are tasty and awesome with chicken, but they’re a bit hard to transport in a lunch box.  So, if you want to transform this recipe into a lunch idea, boil your eggs and slice them on top of the ground chicken mixture.  You can also add the ground chicken mixture to a tortilla for a quick lunch wrap! 

After breakfast, lunch and dinner – we can all be thankful chicken is so versatile!  A + for that!
