You know what? She’s right! All it takes are a few simple ingredients and you can have restaurant quality chicken fingers at home in just a few minutes. The key is to slice the chicken breasts evenly so they bake evenly. Use buttermilk and honey for the liquid and dredge the chicken pieces in a corn meal and breadcrumb batter. And here’s a great trick for freezing: Place an entire tray of chicken fingers in the freezer so they harden a little bit. Then you can just pop up them in a plastic freezer bag (without squishing them) and back into the freezer, ready for reheating. Makes the perfect after school snack or dinner for the little ones.
