Butter chicken is not the first thing we think of when looking for healthy dinner options, but with a few minor changes, butter chicken becomes a healthy and delicious dinner the whole family can enjoy.
The key is to really let the onions cook though before adding in the spices and let them simmer for a bit to get that beautiful aromatic flavour that’s so delicious in Indian food. Theresa also likes to use chicken thighs, as they’re a little juicier, but chicken breasts work just as well.
Now for the fat-reduction! If you’re okay with the extra calories then go ahead and use full cream, but if not evaporated milk makes a great substitute. Just remember to add it at the end and not simmer the dish with it as it will break apart.
