How to Plan Ahead for Dinner

Have dinner doubly done with Food Network host and nutritionist Theresa Albert’s freezer-friendly butter chicken recipe.

Planning ahead for dinner is important to maintaining a healthy lifestyle. Nutritionist, best-selling cookbook author and Food Network personality Theresa Albert shows how to make a double batch of aromatic butter chicken, with lower-fat ingredient options.

Butter chicken is not the first thing we think of when looking for healthy dinner options, but with a few minor changes, butter chicken becomes a healthy and delicious dinner the whole family can enjoy.

The key is to really let the onions cook though before adding in the spices and let them simmer for a bit to get that beautiful aromatic flavour that’s so delicious in Indian food. Theresa also likes to use chicken thighs, as they’re a little juicier, but chicken breasts work just as well.

Now for the fat-reduction! If you’re okay with the extra calories then go ahead and use full cream, but if not evaporated milk makes a great substitute. Just remember to add it at the end and not simmer the dish with it as it will break apart.

This dish works just as well in a slow-cooker and freezes well. Freeze in single containers for easy one-person meals. Serve with basmati rice for an authentic experience.
