Tournedos are traditionally made using beef tenderloin, but can easily be made using chicken thighs or breasts. They make for a very elegant starter or as a main dish when served with sides.
We chose to use chicken thighs in our version, but chicken breast cutlets work just as well. Roll up one chicken thigh and then wrap it in another thigh. Wrap a slice of bacon around the chicken and secure with kitchen string. Place in a greased casserole and baste with your favourite marinade or simply dust some of your favourite herbs on top and place a pat of butter on each. Bake at 350ºF for around 30 minutes or until or until the internal temperature reaches 165ºF.
Pairs brilliantly with green beans or asparagus and side of roasted potatoes.
