We’ve given the traditional Cobb salad a summertime makeover. Instead of the traditional Cobb salad ingredients we’ve added in some fresh in-season ingredients and replaced the Roquefort with a zesty feta and topped it with a citrus infused dressing.
Like the original, we’ve kept the chicken, marinated it in half of the dressing and grilled it to perfection. Grilled chicken breasts make the perfect salad topper and are an excellent way to add some protein to your greens. We also grilled whole corn cobs to add some charred sweetness.
