Love fajitas but hate the hassle? This One Pot Chicken Fajita Rice Dinner delivers a ton of Tex-Mex flavour without a toppling pile of dishes at the end.
To begin, sauté sliced chicken thighs and onions until the chicken is lightly browned and the onions have softened. Next add the chicken broth, Tex-Mex seasoning, and rice and bring to a boil. Simmer until the rice is cooked, about 15 minutes. Cooking the rice with the other ingredients not only saves you that extra pot to wash, but also infuses the rice with flavour.
