This salad combines all the zesty flavours of the Mediterranean into one incredible dish. The addition of chicken gives this salad some much needed protein making it perfect for a main dish. It’s also a great way to use up that leftover chicken.
To make, chop all your salad ingredients and place in a large bowl. Combine the olive oil, lemon, thyme and oregano to make the dressing. A great tip for making salad dressing at home is to combine your oil and acidic agent (in this case lemon) in a mason jar or old jam jar, and with the lid tightly secured, shake the jar vigorously until the ingredients are well combined. Pour the dressing over the chopped salad and toss well to combine. Refrigerate for about 30 minutes to let the flavours mingle. Toss once more before serving.
Pair this dish with a glass of very chilled dry white wine and some nice crusty bread for a beautifully rustic meal.
