Paella is a Spanish dish consisting of rice meat, such as chicken, and vegetables. Its Mediterranean flavours make it the perfect meal for a backyard feast with good friends and nice wine.
Traditionally paella is cooked on the stove only, but our version is finished off in the oven shaving a good chunck off the otherwise extremely long cooking time of authentic paella. The addition of feta and olives adds a nice bite.
