Our chicken stuffed peppers are so easy to make we guarantee you’ll be making these at least once a week. They’re also low in fat and calories and high in protein making them a nutritious (and delicious!) option for those watching what they eat.
We weren’t kidding when we said it was easy too. Simply combine all the stuffing ingredients in a bowl and spoon into hollowed out bell pepper halves. Any variety of bell pepper will do, so if you only have green peppers on hand that’s ok! If preparing for guests, a variety of colours makes for a pretty serving.
This recipe also makes the perfect gluten-free meal. Just make sure any BBQ sauce you use is labeled GF.
