Begin by cooking your rice of choice according to the package instructions. Next, in a large sauce pot, sauté minced onions, garlic and spices in olive oil until tender and fragrant. Stir in whole-wheat flour until blended and sauté for another 2 minutes. Pour in chicken broth, making sure to scrape up bits from the bottom of the pan and stirring well. Bring to a boil and simmer for another 5 minutes. Next, add your diced vegetables and chopped, cooked chicken breast. Continue to simmer until the vegetable are tender, yet crisp.
