Curry in a Hurry

This versatile recipe has endless variations, depending on the vegetables and liquid used.

Interested in making your own curry at home, but daunted by the complicated prep? Fear not! This Chicken Curry in a Hurry recipe is a great starting off point if you’re new to curry. It is easy to prepare and calls for simple spices and ingredients that you likely have on hand. And if not, many of the ingredients can be swapped for what you have in the fridge. 

Begin by cooking your rice of choice according to the package instructions. Next, in a large sauce pot, sauté minced onions, garlic and spices in olive oil until tender and fragrant. Stir in whole-wheat flour until blended and sauté for another 2 minutes. Pour in chicken broth, making sure to scrape up bits from the bottom of the pan and stirring well. Bring to a boil and simmer for another 5 minutes. Next, add your diced vegetables and chopped, cooked chicken breast. Continue to simmer until the vegetable are tender, yet crisp. Season with fresh herbs – parsley, cilantro or basil are recommended – and serve over a bed of warm rice.
