Lemon Roasted Chicken

This simple recipe makes a delicious, juicy chicken lightly infused with the flavour of roasted lemon.

  1. Remove giblets, neck and string from chicken (if any). Place chicken on roasting pan.
  2. Mix salt and garlic together in small bowl. Squeeze a little lemon juice all over the chicken. Rub salt and garlic mixture all over the chicken.
  3. Place lemon halves inside the biggest cavity and roast in the oven at 350°F (175°C) until the chicken reaches an internal temperature of 180°F (82°C) and the skin is crispy.

    I put lemon slices and some chunks of peeled ginger root in the bottom of a clay baker, place the chicken on them then put the salt and garlic mixture on.
    3 hours at 325 deg. F. The chicken browned beautifully and was so tender!
