Grilled Chicken with Watermelon and Tomato Salad

Watermelon and tomatoes may seem like an unlikely pairing, but the sweetness of the fruit works perfectly with the slight acidity found in the tomatoes. Toss in crisp slices of romaine lettuce, and you've got a meal that not only tastes fresh and light, but looks great on your picnic table. Ingredients

Grilled Chicken

4 boneless, skinless chicken breast(s)
¼ cup barbecue sauce
1 tbsp lemon juice

Watermelon Tomato Salad

5 cups seedless watermelon, diced
4 plum tomatoes, diced
1 cup red onion(s), diced
¼ cup red wine vinegar
¼ cup olive oil
4 cups Romaine lettuce, shredded
½ tsp black pepper, freshly ground

Food Safety

Before you start, wash all surfaces and your hands with soap and warm water, and remember to wash your hands, utensils and cutting boards after they touch raw meat or eggs. Steps

  1. Preheat grill over medium-high heat.

  2. Whisk together barbecue sauce and lemon juice in a small bowl. Pour over chicken breasts and coat on both sides with a brush.

  3. Turn off burners on one half of the gas grill. Set chicken on cool side of grill and close lid. Grill chicken for 10 minutes, turn and cook another 10 minutes or until the temperature of the thickest part registers 165°F (74°C).

  4. While the chicken is cooking prepare the salad by combing all the ingredients in a large bowl.

  5. Serve salad with the grilled chicken pieces.

Helpful Tip

Watermelon and tomato are an unlikely, and surprisingly good, summer combination. The sweetness of the watermelon pairs nicely with the acidity of the tomatoes.
Optional: add 1 tsp (5 mL) sugar to salad.
